What to do?

My schedule was recently shuffled, and I now work all day on Monday and Thursday, mornings on Tuesday and Friday, and have all of Wednesday off.  And I ad no patients to see today, so am already caught up with yesterday's reports.  This means that I can study this afternoon, and have a precious evening to spend with the one I love.  (And the dogs.)  And, not surprisingly, I'm thinking about what to cook for dinner...

When I looked through the fridge this morning, I realized we now had TWO entire packages of bacon.  I attribute our recent bacon binge on the discovery of grilled bacon and onion pizza.  But I don't really want pizza tonight, so I'm thinking breakfast.  Bacon, eggs, toast with raspberry jam... good ol' breakfast.

But I really need a vegetable.  We generally only get one vegetable cooked for any given meal, but you really need at least one.  My standard go-to veggies are broccoli and zucchini.  Sometimes corn, but I'm conflicted over if it's actually a vegetable.  Sweet potatoes in the winter, but I find I don't want to eat them in the summer.  Occasionally, I'll go on a wild tear and buy pickled beets, and eat an entire, liberally salted jar over a bowl of cottage cheese.

What kind of vegetable translates to breakfast?  I'm thinking some type of zucchini - maybe a latke?  Hmm... zucchini latke fried in bacon grease...  Okay, not the healthiest thing ever, I know.  But still.

Also, ever since Dash and Bella posted about garlic confit, I've gotten a little obsessed with the idea.  (I have to admit, I'm really just obsessed with that blog.  The caramel ice cream is still gonna have to happen.  Seriously.)  And the confit should be fairly quick to make, although I'm not sure I have a glass jar to store it in.  Will the world end if I use plastic?

So, tonight will be bacon, eggs, maybe toast, and zucchini latkes with bacon grease and garlic confit.  And maybe grapes...

That confit is going to find itself all over the place in the next week.  It's going to go on that bacon and onion pizza I mentioned.  It's going to roast broccoli.  It's going to go on grilled chicken breasts, and in a spectacular roasted veggie/alfredo/pasta dish I have.  And really, let's face it - it's going to go straight up on bread.

I also want to throw out there that I have been making smoothies for breakfast, and they rock.  Basically whatever fruit, plus ice, frozen vanilla yogurt, honey, and cinnamon.  Originally it was banana, pineapple, and OJ, but it's had several permutations.  Alpha likes the original, but I'm trying to avoid bananas, and have added frozen berries and peaches, fresh grapes, and today, spinach.  The spinach turned it all a horrid color, but you couldn't taste it at all, so it was like a health bonus.  Also, adding part-skim ricotta ups the protein, and makes it creamier.  Win.
